I've recently started brewing my own kombucha at home! Kombucha has been getting a lot of attention lately, promoted by companies such as Synergy and Brew Dr. Kombucha. As it runs about $3-5 a bottle, I decided to grow my own with a piece of a "mother" colony from a classmate.
Kombucha is a fermented drink created by a symbiotic colony of bacteria and yeast, aka “SCOBY”, growing in sweetened black or green tea. The drink originated from Asia, making it known as “mushroom/fungus tea” 茶菌.
Note: In Japan, "Kombu" (昆布) translates to "kelp". So, technically, we're using the term 'kombucha' incorrectly.
