In light of the viral frenzy, I have been honing my health as I continue to see patients. A recent project of mine has been exploring the art of traditional Chinese cooking and the incorporation of herbs. The end result has been full of flavor and nourishing to the soul. Here, I've modified a chicken soup with a Silkie black chicken and some medicinal herbs to focus on immune stimulation. Ah, and the beautiful black/blue Silkie chicken. I got this one farmed from Canada at the local Ranch 99 Market. The taste is lean and gamy, and it has a higher % of protein and minerals compared to a white chicken. In Chinese Medicine, they see the black chicken as a sign of fertility, so this chicken soup is particularly beneficial for pregnancy and postpartum care.
